Frozen: Vietnamese Bo Kho beef stew. Serves two

Bo Kho comes from Southern Vietnam and it's all my favourite things - meltingly tender marinated beef braised in Vietnamese aromatics; lemongrass, five spice, Thai fish sauce and star anise. So delicious. Serve topped with Thai basil, coriander and a good squeeze of lime. A crusty French baguette to mop up the juice but a bowl of flat rice noodles with a dash of sesame oil would also work well. Probably a cold beer too.

Defrost your frozen food thoroughly in the fridge before reheating gently in a saucepan on the stove until piping hot all the way through. Alternatively, you can reheat from frozen on the hob, but use a low heat and keep an eye on it.
