A new favourite - the coconut takes the sharp edge off the tamarind leaving a balanced and creamy chicken curry with a gentle kick. Lovely. Kid-friendly too (and that's judged by my very picky daughter)

Boneless chicken thigh, cinnamon sticks, curry leaves, onion, garlic, ginger, chilli, turmeric, ground coriander, sugar, salt, tamarind paste, coconut milk

Defrost your frozen food thoroughly in the fridge before reheating gently in a saucepan on the stove until piping hot all the way through. Alternatively, you can reheat from frozen on the hob, but use a low heat and keep an eye on it.
