A low and slow-paced Greek/Cypriot inspired stew - cinnamon and allspice round and mellow the flavours. Whole shallots give it some sweetness and the addition of red wine vinegar at the end of cooking lifts the mood. I would eat this with generously seasoned butter beans roughly mashed with the best olive oil you have and wilted greens.

Defrost your frozen food thoroughly in the fridge before reheating gently in a saucepan on the stove until piping hot all the way through. Alternatively, you can reheat from frozen on the hob, but use a low heat and keep an eye on it.
