This is a new one for the bristolKTCHN collection and comes from the most gorgeous new recipe book, collecting family recipes from all over India. It's mellow (no chilli heat), full of warming spices and has been road-tested on the kids who gave it the thumbs up. A winter winner. Serve with the caramelised onion and cashew rice and a radish and pomegranate salad.
Ingredients
Boneless chicken thigh, onion, garlic, ginger, cumin seeds, cinnamon sticks, brown cardamom, green cardamom, bay leaves, tomatoes, kashmiri chilli powder, turmeric, garam masala, sugar.

Defrost your frozen food thoroughly in the fridge before reheating gently in a saucepan on the stove until piping hot all the way through. Alternatively, you can reheat from frozen on the hob, but use a low heat and keep an eye on it.
