Frozen: Goan pork curry. Serves two

This glorious, flavoursome curry originally came from the Portuguese who brought a dish of pickled pork to Goa where the addition of local spices created a complete amalgamation of influences.  This curry is spicy, but not blisteringly so and has a slight sourness from the vinegar, tomatoes and tamarind.  It's complex, different and delicious.
