These summery fritters feature heavily on rotation at home - dangerously moreish, they're just as good stuffed into a pitta bread as they are with a side of the gently spiced tomato sauce that they come with, served with a lemony potato salad and the pick of the summer's tomatoes.
Ingredients (allergens in bold)
Fritters: Courgette, spring onion, dill, parsley, halloumi, flour, baking powder, breadcrumbs, egg
Sauce: Onion, garlic, tomato, apricot, cardamom, cumin, coriander, turmeric

Defrost your frozen food thoroughly in the fridge before reheating gently in a saucepan on the stove until piping hot all the way through. Alternatively, you can reheat from frozen on the hob, but use a low heat and keep an eye on it.
