Classic moussaka, but vegetarian - the ragu is made with puy lentils and mushrooms cooked down with red wine, oregano and tomatoes, but the rest is just the same: layers of aubergine and potato, topped off with a bubbling cheesy bechamel.  A refreshing tangy slaw bursting with crunchy seeds to contrast with the rich flavours.
